Hemp Crusted Chicken Fingers

This recipe is an easy and healthy twist to this home favourite food, and is especially kid friendly! These Hemp Crusted Chicken Fingers contain no processed ingredients or extra sodium found at fast food restaurants. Not to mention, making chicken fingers is a super fun way to get your little ones involved in the kitchen!

Ingredients
  

  • 1 Chicken Breast 16 Oz or 170g
  • 1 Large Egg
  • 1 Tbsp 2% Milk
  • 2 Tbsp Hemp Hearts
  • ¾ Cup Cornflakes
  • 1 Tsp Onion Powder
  • 1 Tsp Garlic Powder
  • 1 Tsp Ground Pepper

Instructions
 

  • Preheat the oven to 350 degrees Fahrenheit.
  • In a food processor; process the hemp, cornflakes, pepper, garlic, and onion powder to a medium crumb. Place this into a wide bowl.
  • Cut the chicken breast into thin strips, about 1 inch wide.
  • Whisk the egg and 2% milk together in a bowl to create an egg wash.
  • Dip the chicken strips into the egg wash, then in the crumb mix.
  • Place these strips onto a baking sheet, and bake for 15-20 minutes until crispy.
